They actually taste good when you season them properly and use an airfryer to make them. Idk they taste good and I like them. They're healthier than normal fries and don't taste bad to me so it's a win.

they're "wetter" than normal potatoes, I bet you could Heston Blumenthal your way into drying them out but who the fuck has that kind of time and energy, the easier way is to cut them slightly thinner than you would a normal chip, and fry until crunchy
