bit of a conundrum
I've got some beef short ribs already braised and I wanted to bring some over to my brother for dinner. As a side, i'm doing some oven baked fries for him with a browned butter hollandaise.

Unfortunately, the short ribs aren't seasoned with anything but salt (because I'm on a strict carnivore diet for an autoimmune disease). They still taste great because I dry brined them and seared them before braising, but I'm thinking about a sauce to make apart for just him.
I've got about 30g of bone marrow left from some 2 day old beef shanks.
Obviously it's too late to think about a pan sauce. Anything else to consider? I was thinking about chimmichuri for a sec, but I already served him that 2 weeks ago with shredded beef in a toasted baguette on my last visit.

I think I'll have to do two weeks on just beef, green vegetables and potatoes to determine if it's "clean" eating that is providing the benefits, or a virtually zero carb, animal product only diet providing the benefits. Assuming there are any benefits and this isn't just good old nocebo

Also, to answer your question.. you surely have some beef in the fridge if you're on a carnivore diet. Fry up a hamburger or a steak or something, save it for lunch tomorrow and make a pan sauce using the fond.

I went from shitting pure blood 17 times a day to once a day. The drugs specific to my condition weren't doing anything I'm afraid, and I tried other diets as well.

i could indeed just brown some ground beef later today, save it for later, but then use the fond on the spot right before i'm about to serve the actual short ribs to make the sauce.

I believe you OP, although it MAY be ameliorated by building up a good gut biome--Can you eat fermented foods?
As to your sauce problem, depending on your brother's tastes, you could either buy a decent bottle(small) of BBQ sauce for the reheat, or make your own(More costly if you don't already have the ingredients on hand.)

To the "Other" poaster, yeah--give it a shot. Not eating clean food is 99% of the problem with Amerilards. Heavy on the vegetables--best if cooked from raw to al dente, and swimming in butter(real butter,) try it. Everyone's body processes differently(slightly due to genes and current damage/metabolism) and requires different things; But ANYONE who lives off a diet of todays commercial based model of food production,(shelf stable, soaked with glyphosate, seed oils, HFCS, etc.) WILL eventually suffer for it.

Personally I think a Korean bulgogi / galbi marinade also tastes good on already cooked beef, although just be careful since as an autoimmunelet myself sesame seeds really set me off.
