I tend to gravitate towards videos since cooking is a craft and you can only learn so much from reading about it. I mean obviously can read, but that usually means you'll need to do more try and error type of grinding back at your kitchen. I usually check out my cookbooks when I'm in a need of inspiration or brainstorming. But like a bad cookbook, be weary of shitty youtube cooks. There are a lot of them out there.

These guys always emphasize how you can cook a dish however you want, and they almost never measure anything. Most chefs don't really understand why what they are doing works and have no problem telling you to do something that will double the time it takes to cook a recipe if it improves the result by 5%.

i would argue that this contemporary trend goes back to cook's illustrated and chris kimball. i think that's where kenji got his start, right? i don't particularly have a problem with it and i always appreciated, even more than the food science, the way cook's illustrated is so systematic about trying things and making connections between what you do and what outcome you get. relatedly, i always loved how cook's illustrated tells you what they're going for in a dish in great detail--what they consider the ideal food x--so that when you've cooked something and you don't like it, you have a much better idea of whether it's not a good recipe or you fucked something up. with most cookbooks, it can be almost impossible to tell.

The only person who I feel actually helped me was Frank prizano and even he seemed like a weasley cunt. His approach to cooking sweet potatoes helped me fine tune my understanding of my ovens cooking temp and the same with his crispy egg method for the range.
