I want to make Chinese food, so obviously I need a wok and cai dao knife. I got a wok. Where do I get caidao? And what is a good price range for a good one? Should they have a straight cutting edge or a little curved? How long and tall should they be?

I got to say, I'm surprised the Chinese have a character for Bowery. Truly they are a great culture.

Pretty sure it just says "Chinese kitchen supply" in Chinese, but in practice Chinese does do transliteration where they try to find something close in pronunciation. America for example is mei guo, which means beautiful country

>Where do I get caidao?
any asian kitchen shop
>And what is a good price range for a good one?
my shi ba zi zhuo costs ~$45, it's pretty good, consider that the maximum I would pay for a big knife, anything higher is purely indulgence
>Should they have a straight cutting edge or a little curved?
slightly curved, like your pic is ok
>How long and tall should they be?
my cleaver is 22cm long, I think.. not sure about height but it should be at least taller than your typical western chefs knoif

Thanks. The local Chinese grocery didn't have knives (although they have literally everything else), so I'm forced to look online. Seems like a carbon steel cai dao should probably be like $30 in a store, but idk.

you have to travel to mainland china for a real one, the ones on amazon and in gwailo american stores are fake made of solid wolf poop

How can you go wrong with a cleaver? It's meant for rough-chopping hard ingredients, is it not? Does brand/quality actually make a tangible difference?

I am not talking about a cleaver for butchering meat. Chinese cleaver is basically a tall chef's knife. Very thin behind the edge.

Op is the mind of fag who wants to get into bike riding, spends $2,300 on a touring bike and a spandex onesie, camelback, apple watch with heart monitor, carbon fiber butt plug, etc., etc.

Then rides for 3 months, never improves, gets bored and stops completely.

Imagine thinking you need a magic Chinese cleaver to make Chinese food

I've got one of these cheap single piece cleavers, was about $10.
Must be 4 years old now and holds an edge incredibly well.
Use it a lot more than any other knife, great value for what you get.

keep in mind that a traditional wok is a round bottomed vessel (nice) that is meant to be used at high heat over an open flame essentially.
You can get a flat bottomed wok for an electric stovetop which might be alright, but it's never going to give you the same wok hei as you would get from a restaurant with proper equipment. So... just temper your expectations.

buy any carbon steel chinese cleaver from aliexpress. then realize that dealing with rust in the knife the second it touches any moisture sucks and go back to your stainless knives. at least it will be a cheap lesson.

Isn't a nonce just another term for pedophile? Why would wanting a particular type of knife be associated with that?
