This. Cosmic Crisp is a hybrid of Honeycrisp and tastes virtually the same, but it has been bred specifically to hold up better during storage and transport. Honeycrisp are great if you can get them fresh from a farmer's market or something, but Cosmic Crisps are just more consistently good year round. Where I buy my Cosmic Crisps they are a full dollar cheaper that Honeycrisps per pound.

I've noticed the same thing. Apples are often stored in warehouses for 9-12 months, and on average the apples you actually purchase at the grocery store are 14 months from the harvest date. They are stored under very specific atmospheric conditions that effectively stops the apples from ripening any further, but they can still lose moisture and flavor leading to a mushy, bland tasting apple. Some varieties are more resilient to long term storage. I would assume due to the popularity of Honeycrisps, the production is very high, leading to more of them spending longer times in storage. Just buy Cosmic Crisps, they are virtually the same thing, but bred for better storage life.

Depends on your criteria, but as an all around apple for many purposes I'd say the Gravenstein is a solid contender. Good for eating, good for baking, good for juicing, and good for fermenting into cider.

depends. winesap and kansas black are pretty good, though i personally prefer mcintosh over pretty much anything else. granny smith decent for baking. don't have enough experience with other varieties for cider, though i'd imagine a nice, dry, sour-sweet or bitter-sour apple would be best for that purpose. i really, really like crabapples though, and for all intents and purposes, they're the best in my book.

Yes, it's called controlled atmosphere storage. They also treat them with a special gas that controls the rate of ripening by blocking the apples ability to detect ethylene which is the chemical that causes ripening, and is naturally present in the apples.
