Aeropress is fine in my book, if you want to avoid plastic you've got v60s and french presses. The latter is simpler and with a v60 it's nice to also have a gooseneck kettle which drives up the total cost, so I'd probably recommend the french press.
Also if you're tempted to go for a cheap entry level grinder DO NOT buy hario ones. They're dogshit and not worth the price.

you don't have to. something like a delongui ec685 makes perfectly good espresso. using a pressurized basket removes the need to buy an expensive grinder. if you don't want watered down coffee, espresso is the only way to go, don't listen to the snobs that tell you that it is impossible to make espresso without spending thousands, 99% of them wouldn't pass a double blind test.
