why are all the steaks at the mexican market sliced so thin? seems like they have a bunch of different cuts of beef, but theyre all sliced into super thin slabs. how do you utalize this? just grill it for short amount of time? does it help with crockpotting or anything?

They come from a third world country as do most of their clientele. Beef is expensive where they came from. It’s like with Chinese dishes or Korean dishes that use paper-thin leathery (overcooked) slivers of skirt steak. I’d recommend taking notes. Frying food at home seems so wasteful. You end up with a whole bowl of eggs that are contaminated with raw meat. You get a whole bowl of flour/bread crumbs that are contaminated with raw meat. You get a whole pot of oil that is full of flour trimmings.

cooks fast. you can boil them, grill them, or fry them. traditionally mexician food has very little meat in it. Why? because before contemporary times mexicans were dirt poor peasent slaves. and before they were colonized by europeans, they were still dirt poor peasent slaves. Oh did I mention central america has zero domesticated livestock? Guess what the meat in a traditional mexican meal use to be? People. Unironically. People. Its why they have happy skeletons in all their holiday decore. They would chop people up and serve human flesh in tacos and shit. They finally got access to beef and pork when white people brought them cows and pigs. But even then, they were still basically hired help and only got to have scraps, not big fat steaks. you are putting too much shit in there. the air fryer works by pushing hot air from a fan at the top and it cooks the food by circulating around it. If you stuff the basket with a ton of food, the air doesnt circulate so only a part of the food cooked. Since 99% of the shit you are putting in there starts out frozen, that means you get half cooked, half defrosted slop.

I replaced my rear diff gear oil a year ago.
recently the cover was leaking oil, so i snugged bolts and then popped gear oil plug off to add about 125cc of gear oil that had leaked out (holds about 1500cc). I found these chunks of metal attached to the magnet. how fucked is the rear gear and how much time do i have to get myself a new rear axle?

Some popular stews typically feature lots of meat in medium-thickness slices of about 3-4mm, unlike the see-through jap/korean ones.

For grilling, Mexicans like well-done cuts and don't tolerate anything even close to medium (on average), usually for food safety reasons, being a third world country and all.

You end up getting more browned goodness in exchange for the lost juiciness, but you're drowning that shit in salsa, beans, quesadillas and whatnot anyway, so it's actually not that bad of a thing. The meat doesn't even have to be juicy when you're adding guacamole and salsa in there.
