Braised tofu with stir fried veggies over white rice.
Veggies are carrot, mushroom, broccoli, chili, and garlic
Reduction is vegan beef stock, soy sauce, vegan fish sauce, mirin, gochujang, chilli/garlic paste.
As well as a Schezuan seasoning mix to make the tongue pleasantly tingly.

I love broccoli :3

I noticed some youtubers saying Beevor is a bit biased against the Russians (exaggerating the number of Russians killed by their commanders), and it kind deterred me from reading more, but I'm continuing it

It's mostly salt, sugar, vinegar+citrus, and has kelp and mushroom powder for that fishyness and umami.

For the tofu I fry it in the wok until it gets a bit of a crispy skin, then I move it to a medium sauce pan with
1/4 cup vegan beef stock
4 Tbsp or soy
4Tbsp vegan fish sauce
1-2 Tbsp mirin
a spoonful of gochujang
Spoonful of chilli/garlic paste
A handful of dehydrated chili's
Couple tbsp each of crushed ginger and garlic
I let that gently simmer while covered, stirring a few times until the liquid reduces to desired thickness (usually about 10-12 minutes) I add the stir fried veggies to the tofu in the last minute or so.
If the sauce thickens up too much you can add a bit of water before you put the veggies in (or else they will be steamed+mushy)

If you can get Szechuan peppercorns crushing/toasting them makes them like a mild numbing agent and it gives your mouth a very pleasant tingle (although I used too much once and it was quite strong and uncomfortable)
