I love oatmeal and cream of wheat (or cocoa wheats) but grits are so blah I don't get the fuss. I've tried them sweet and savory, I have a bowl of jalapeno cheddar grits in front of me right now and I just don't like them. Is this a food you just have to grow up eating? Is fresh way different than instant? I had them at cracker barrel once too and they were even blander

I don't like the texture of grits as much. But I made something similar with masa harina instead that was good. It was kind of like cream of wheat. 1/4 cup of masa harina in 1 cup of milk, whisked until it boiled and thickened.

Apparently masa is more nutritious than untreated corn too because it's easier to digest.

That would be why. You're eating shitty processed instant grits instead of doing it properly.

I stopped buying grits ever since I noticed every fucking package I can find says made with bio-engineered ingredients. Even the local stuff.
Plus, lately I'm shitting my brains out for the next day and a half after I make em.

But FWIW, use chicken stock instead of water.

Do you eat the instant ones from the flavor packet box, or do you make yours and dress them up with actual ingredients?
Its like plain boiled oatmeal vs oatmeal from a packet vs oatmeal that you've mixed with yesterday's leftover cinnamon fried apple pie filling and maple syrup. Cooklets get cooklet results.
This is what I made yesterday. Cheesy gritts with fresh dill piled on some poached eggs; aint getting that at crackle barrel. They use instant grits and don't flavor them since their clientele is old people who's tastebuds are dead.

like polenta, i feel grits are more of a side than other porridges. they need something with them, cheesy grits with a load of pepper and topped with shrimp (and bacon) is a great meal, but as others have said, the instant stuff isn't as good. make your own and add good cheese

Grits are a treated and ground corn product like the masa you used, but at a coarser grind. Unground the treated corn is either called hominy or nixtamal. Both are nixtamalized, but masa was traditionally done with calcium hydroxide while hominy (for grits) was usually done with potassium hydroxide, though both can be used vice versa.
Untreated ground corn flour is commonly called cornmeal.

Yes, it's a base to build on. Get some cheese grits with shrimp and Tasso gravy. So good, and probably one of the least kosher meals.
