If you make JJ tuna don't underestimate the amount you have to squeeze the tuna. You have to do it in tiny handfuls, smaller than a golf ball. Otherwise it will be too wet. Also add it to the tuna before any mayonnaise or vegetables are added or they'll absorb it.

they buy in bulk from purveryors and have quality control standards of their own. It's not good quality at all, but it's better quality assurance as far as not getting the skunky bits in the tuna, because they test for it. Canneries providing for the public figure more skunk is OK, because they sell so much more on average, that a certain amount of skunk won't kill sales too much to matter. They both play the numbers, and in the end, the guys buying a couple cans a month (at the best on their averages), this being everyone besides the bulk guys like Subway, are the losers. So yeah, most canned tuna sucks now, because you'll get some shit that will make you want to vomit, but not quite make you vomit involuntarily, so it won't kill you, every now and then. For a while solid white albacore canned tuna was beyond this effect. Not anymore. Now you have to go to more niche and more expensive shit, because they know you, beyond those who don't care about vomit inducing bullshit, will pay an extra $2 to not want to puke on what should be a 75c sandwich, at most.
