got a pound of loose leaf thai tea mix for like three fifty at the asian store. normally i would pass tea mixes, especially dishonestly dyed tea, but not ceylon tea at this price.

it's fairly different from the chinese stuff. less sweet and more savory in a vegetable broth kind of way. and something about it reminds me of lime... an intersection of spicy and sour nuances? not bad.

Ouch, that's quite the wait. What was the last tracking message about? But yes if it is airmail then often the package will sit around for long time at the airport until they have free space on a plane. The tracking will not update while it is waiting, they only update tracking when a package is moved. I have had some packages sit for weeks with no update until suddenly they are on a plane.

I'm a big fan of turkish tea, but then again I have a samovar (semaver in Turkish), if you have just a kettle and teapot I've always been a huge fan of russian caravan. Turkish tea has a lovely ruby red colour if that's something you're into, it has a somewhat earthy/grassy taste that some people don't like though.

idk where you live, but the usual recommendation is to either find a local specialist online tea store, or buy from China (yunannsourcing is approachable for a first purchase and has a wide choice of tea)
if you want to try easy to like teas from different categories, get something like:
>oolong: tie guan yin or taiwanese oolong
>some chinese black tea (for yunnansourcing everyone keeps shilling black gold bi luo chun, but I haven't tried it)
>some freshly harvested 2023 green tea (long jing is the most famous, but choose anything you want)
>maybe some pu-erh? ripe / shu can be a bit similar to coffee and raw can be good if you want something intense with some bitterness and astringency

80c for green, 85c for bud white teas, i like my blacks at 90c and boiling for everything else. what really make a big difference is amount of leaf vs water and what you're brewing in. best advice is get a cheap $10 ~100ml gaiwan off amazon and use 5g of leaf. steep the leaves multiple times increasing the brew time a little each time i.e 1st brew for 10-20 sec, drain and drink. 2nd brew for 15-25sec, drain and drink. repeat until there's no flavour, most teas can take 8-10 steeps like this

I mostly tried black teas and oolong from YS so...

I think one of the best is "Wu Liang Hong Mao Feng Yunnan Black Tea "

Next order i would try "Imperial Mojiang Golden Bud Yunnan Black Tea" and maybe the "Competition Grade Jin Jun Mei Black Tea" to see if i feel a difference.

The "High Mountain Red Ai Lao Mountain Black Tea" is also fine but the wu liang have a longer taste in mouth imo.

"Sweet Potato Zheng Shan Xiao Zhong Black Tea" is correct but not as good as the High Mountain Red imo.

The lapsang souchong is ok but not the best source i found correct for the price i would say if you like smoked.

If you like "oolong" the "King of Duck Shit Aroma" is pretty good but expensive comparing to other teas. The "hairy crab" is not that great but really cheap for oolong.

The "Imperial "AAA" Tie Guan Yin of Anxi Oolong Tea of Fujian " is pretty good but again expensive.

Maybe looking into taiwan sourcing but never ordered from there.

I have found out that gaiwans with thick walls are harder to pour. The water tends to ride that lip of the wall harder than a thinner gaiwan.

my kettle is next to my desk. chinese will keep the leaves in the teapot and just refill it with water once its 2/3 empty. get a tea cozy and that will help keep the pot warm. lots of kettles these days have a keep warm function.

decanting all the liquid is min-maxing and will depend on how big your teapot is, most gongfu pots and gaiwans are around 100ml-200ml i.e a teacups worth. bigger pots you can either decant after its brewed into a second pot(British style) or as i said at the beginning just keep topping up

It's pretty easy to get a kettle that will hold its temperature for a period of time. I have a 1.7 liter variable temperature Cuisinart kettle that will hold my water at a specific temperature for 30 minutes. It has 6 options of different degrees from 160F to boiling (212F), which are each designed to be suitable for the different styles of tea. (Green to black and one for coffee)

It ran me 90 bucks, which wasn't that expensive to me, for something I am using constantly every day, but there are much cheaper kettles that will do the same thing if you look on Amazon. My previous kettle was a much cheaper Bonavita .7L and instead of having preset temperatures I could enter any temperature I wanted and it would hold it there for at least 30 minutes.

Kettles are a diverse market. Do some digging depending on what you want out of it. If for example you only drink black tea you could save some money by finding a kettle that will keeps its water around boiling but for a longer period of time.

But you want to take the leaves out after the brewing time.
Either brew in a teapot with a basket that you can take out, or brew in a mug using a big mesh basket.
If you just toss the leaves in a teapot that's fine but you want to pour all the tea out at once after 4 minutes or whatever your brewing time is. Don't oeave the teapot half full of tea and leaves for like 30 minutes while you drink the first cup you poured.

I used to agree and i have two 100-110ml pots but i got an 85ml recently and i really like it for quick small sessions. Especially after dinner.
Its also nice for any tea you want to just cram the pot full of, deep roasted oolongs and that sort of thing.

I find it closer to tian jian or fu brick. This particular one has some hints of cherry flavor, aged tea, some humid storage notes, pretty mellow and soft, i don't get the strong chocolate notes that i do with liubao but ive heard some other liuan baskets described as chocolaty.

Bitterleaftea order arrived, the 2023 Yiwu maocha was pretty disappointing, just tasteless all around and no huigan but it had a strong chaqi maybe because my stomach was empty.
Picrel 2020 Fall Kunlu raw puer, 5.5g in 90ml gaiwan, the dry cake had no smell so my expectations were very low but it was surprisingly good. liquour and wet leaves smelled amazing but cant really describe it, more savoury than sweet smell. long lasting bitterness which had a sort of seaweed or vegetable taste but pretty weak huigan from it, great daily drinker. 0.19 usd/g so kind of expensive especially for fall material
seems like east Simao is as interesting as i thought, definitely gonna get more puers from there

if they're that volatile it feels like you'll lose them no matter what when hot water is involved

Anyways, i preaheat the gaiwan then put leaves in and brew.
If you really want you can put the leaves in the hot gaiwan, put the lid on and wait 40 seconds or so, they pull off the lid and sniff it.
"Preheating" leaves makes no meaningful difference in the quality of your brews and isn't evaporating a bunch of flavor or whatever bs.
Don't over think it, its just tea, everyone always trys to make shit so complicated for no goddamn reason.

If I have a guest I will do the whole shebang, but when solo or casual, since I weight out my tea in my gaiwan, I don't preheat it, but I will use the rinse to heat my cup.
So yeah, it's a good practice. Gongfu is about being attentive to tea. Placing the tea into the teapot or gaiwan after its been heated sometimes offers a different perspective or context in which to understand the aromas of the tea.
