Given you were in Italy, and the menu specified extended time, they probably made it the traditional way. A lot of mid tier restaurants in North America will make restaurant method risotto despite the fact they're not specifically Italian or Italian-American cuisine restaurants. It's one of those dishes normally associated with a particular type of foreign cuisine that gets lumped into a lot of menus as a miscellaneous dish or appetizer at steakhouses, like calamari.
