Because of preparation. For a long time, lobsters were prepared just like how they prepare fish; that is, they're caught, left as is and cooked only when they want to eat it. Somewhere along the line, people realized that you have to cook it fresh, e.g. immediately cook it when caught, or cook it then freeze it for it to taste good, and that's when people start to appreciate its taste.
It wasn't a simple case of 'it's expensive now so it became popular.'

For me, it's steak and lobster tail. It’s the best food combination at my local Texas Roadhouse. I even ask for two steaks and two lobster tails and the staff is so friendly and more than willing to oblige.

The staff always greets me with "hey it's Mr. Two and Two!" It's always such a fun and cool atmosphere. I go there at least 3 times a week for dinner. For me it’s affordable, fast, and matches my daily nutritional needs.

I used to catch Panulirus when I lived in Southern California. They were excellent. I would make use of every part from the carapace to the tomalley. Easiest way to cook was to separate the tails from the body and split the tails down the middle with a sharp knife. Minimally season with sea salt, panko, and spices with some butter and then cook under the broiler for a short time. Perfect everytime.

For me, the best surf and turf is a pork chop with scallops. We like to do things differently in Canada.
