>a thousand years ago some peasant drops an egg in the mud
>months later he finds it after it's turned a horrifying green color and smells like horse piss
>desperate enough to eat it
>miraculously doesn't die
>fast forward to current year
>served at weddings

They taste good. They do smell, but it's not really an issue. Modern method is more like a science experiment. You could buy them done but you risk buying shady shit made with toxic faster acting chemicals.

They look weird, but they just have a stronger "eggy" flavor than normal hardboiled eggs.

If you think this is the most remarkable nonsense they eat, I have some really bad news for you, newbie.

Frogs, snails and Camembert in France?
Sushi and whale meat in Japan?
Caviar in Russia?
Lobsters in the southern USA?
Casu martzu in Sardinia?
Surströmming in Sweden?

All "fancy dishes" that originated from famine and extreme poverty, people risking stuff that could kill them because the risk was better than certainty of death from starvation. And once the famine was over, pretending it's gourmet and by choice, not literally last resort.

These things are not lobsters, and nobody considers them fancy. They're like a novelty festival food at best.

If you're trying to stop food poisoning, that won't do jack shit. At the very least, you'd need a higher alcohol content drink like spirits or maybe a very strong wine. But even that won't help if you're ingesting bacteria shit.

Most of that is just seafood but even the weird stuff is still served fresh and prepared like normal food instead of rotting in mud and/or chemicals for months.

same reason people drink water filtered the roasted ground up poison filled seeds from the coffee plant.
same reason someone left barley soaking in water for several weeks and decided to drink the foul smelling results.
same reason people eat cheese flavored with the actual germs from their feet used to break up the curds.
same reason people make a soup from the slobber of birds gathered from shit covered nests.
