i just it cook on medium and use a thin metal spatula to chop it up and it properly crumbles up after and when the beef hits the gray stray stage i drain the fat and liquid and it browns up real fast after that then dump in the spices and add water till the spices coat all the beef, bring to a boil the reduce to a simmer until it thickens

Fattier beef will help keep it soft, but I tend to use ground sirloin when making taco meat. Medium heat I use olive oil, salt, black pepper, chili powder, garlic powder, cumin, and red pepper and don’t overcook it. imo you’re likely overcooking it. You can also add water but a minimal amount which will help turn the spices into a “sauce” with the beef. I don’t use a ton of olive oil but the juice leaving the beef usually keeps everything moist enough.

Half a cup, maybe a third cup, you could also use beer or stock
Yeah, mix it in with the raw beef on a cold pan before applying heat
You have to stir it pretty constantly until it all turns grey, then the liquid will separate and boil off
You don't have to completely brown it as others have suggested, but if you want to brown something else like some chopped onion, you will need to boil it off, then add more water and taco seasoning later
This also works well for American-style red spaghetti sauce, the small bits of meat will stick better to spaghettis

If you're making Mexican or Tex-Mex you're not supposed to use Mediterranean oregano, you have to use Mexican or it will taste odd
Badia sells it dried, it's cheap, look in the Mexican food section at your store with all the spices in bags

Taco bell meat is a sausage of soy, oat, and beef. The beef is high fat (with lean meat combined with fat for a specific consistency), which is rendered and excluded in the cooking process, as in most sausage. You can get close with much less processing, but if you want to get very close at home, be prepared for stupid amounts of processing.
