Marinate in olive oil and Italian seasoning, pound flat and then batter in flour, lightly fry in a skillet, while chicken rests make Alfredo sauce and fettuccine, slice chicken and add it and sauce to now drained noodles.

When I make really flavorful and rich stews I prefer chicken breast. It has a great texture and cleaner taste than dark meat. I like both but for me when I'm doing chicken and dumplings I'm going to sweat down a mire poix with a pound or three of butter and herbs. By the time I'm done any dark meat would be overpowered and just taste gamey or bitter. Same goes for any rich sauce I'm making or most Indian dishes. I find white meat chicken can come out better for these heavily spiced dishes. I almost always brown the breasts first and then I'll shred them into large juicy junks. This way the ridges catch all the flavor and I still have a heart piece to bite into.
