I am partial to central Texas style, simply because I’m in the pursuit of the perfect brisket - I find there’s so many variables to this.
When it comes to pork, I think the bar for average Q is set pretty high. It’s so good and so hard to make bad. The top places though, they’ve mastered a way of doing something special.

Hell, I’m just glad this thread is getting traction. We need to all do some outdoor cooking this weekend and just enjoy whatever the hell style you like.

I've eaten at Dallas BBQ a bunch of times
They're processed fast food garbage, most of their dishes aren't actually smoked, the chicken comes out dry every time because it's clearly sitting under a fucking heatlamp all day and not made to order.
The only saving grace they have is the Beef Rib is pretty good. and the fries in their bbq sauce is the good kind of garbage.
