Got a whole chicken with skin on because I'm poor. I can just boil it to hell and get stock and shredded meat, but I'd appreciate some ideas, stovetop only.

Bake it on the rack, with a 9×9 of potatoes and onions chopped up under it. Stuff the chicken with cut up lemons and rosemary. Pepper the skin.

Break it down into its parts. You can fillet the breast, cut it lengthwise and pound it into cutlets that will cook evenly and will take to breading well. Other pieces you can sear on high heat with minimal oil (if any) to develop a crispy crust, then braise them in some kind of liquid (anything works, from water to storebought stock to beer or wine) with the crispy side exposed.

also, just chop it into smaller pieces and make pan sauces. if you start it skin side over medium heat the fat will render first so it's pretty easy to cook the chicken first then deglaze the pan with some wine or broth

As a fellow poor person there is nothing wrong with poaching the whole thing, picking the meat off and portioning it up. You're not going to eat a whole god damn chicken by yourself. Throw the carcass back in the poaching liquid with some veggies and now you've got stock and enough meat to make a few meals.

Whole chickens are great to experiment with.You can make many different things. If I had a whole chicken and no oven I’d break the chicken down and make a huge pot of gumbo.

Slow roast it in a covered pan at 250F for a few hours. When you can easily separate the meat from the bones, you'll know it's done. Strip the meat from the bones and save it for later, use the drippings for soup, and the rendered fat for a variety of things. The skin will be soft and chewy unless you unlid the pot and broil it at the end, so either broil it or save the skin for something else like dumpling filling, stirfry, or dog treats.
Also throw some herbs and spices before roasting. It'll add flavor.
If you want to try your hand at it, you could cut the chicken up into different cuts like breast, legs, quarters, and so forth although that's a bit more effort that throwing it in a pot. I'd recommend against just boiling the whole chicken in water as-is, the meat will be rubbery and flavorless. If your want to just make broth then use just the fresh bones after cutting off the meat.

Remove bones and skin
Use bones for stock, render the fat out of the skin, chicken fat is really high quality, don't do the boiling thing, it takes forever just throw it in a pan on low or in the oven
Sear the breasts and cook then in some kind of sauce, serve with rice. That's 4 meals
Stir fry the thighs with noodles and Vegetables thats 4 more meals
Use half the stock to make soup and half the stock to make stew that's 8 more meals
You can even eat the fried skin. If you didn't undercook it or overcook it
Anyways that chicken just fed you for a whole week
Make bread to eat with the soup and stew, making bread is dirt cheap and easy

Noted and saved, I'll do these in the future.
For now, seared the skin, deglazed with onions and a beer I found in the back of the fridge, and now the meat is back in the pan. Added legs and thighs first and breast just went in, just waiting for everything to get up to temp. Making stock with the rest, will use the meat in some taquitos.
