I love Blue Cheese, and recently I got a surplus of it, that either expires soon, or officially expired these days.
So besides putting it on pizzas, Bburguers and sandwiches (and you know, eating it directly)....are there any other recipes that use blue cheese?

With cured ham in a pie or with gnocchi, with radicchio or witloof and walnuts. With figs. Or to finish a celery cream soup. In a buckwheat pancake and/or with Brussels sprouts. In a cauliflower purée. Goes great with most pumpkin recipes. Oeuf en cocotte with chives and blue cheese. In a soufflé or focaccia. With polenta and sausage. Or as is, with curly endive, dried fruit, compote of quince, dressing with reduced pear, and a simple glass of port.
