I honestly have no idea how to get cheese to melt with grilled cheese.
I tried really low heat, I tried really high heat, and everything in between. Never got truly melted cheese.
I think next time I'll try high heat, getting that crust, then finishing in the oven like I'm fucking searing a steak.

This is good, but for more texture, I use a waffle iron. You can't squeeze it shut, but just let gravity take the wheel.
For reference, I do have a Foreman grill and two panini presses.
Oh, and you can use mayo instead of butter.
