I've always wanted to do a "Museum of Food."
You know those YouTube channels like "Tasting History" and whatnot? Well basically: a restaurant/museum based around that.
We'd take an abandoned shopping mall and convert it into a giant tapas food court. Complete with informative plaques about every dish you could try and sections devoted to every corner of the world:

> Victorian Era Cuisine
> Elizabethan Cuisine
> Louis XIV's Court Cuisine
The portions would be small, so people would be really encouraged to experiment. We'd try to make the servers as well-informed as possible. There'd be period architecture around every section of the place, to really sell the "museum/restaurant" feel. And there'd even be "WARNING: TASTES BAD" signs for some of the stuff, just to show how historically accurate we were.

In the days of the internet you get the right eyes on your project and it can blow up to be quite a thing.
