As someone who has family that are paid by being influencers, my goodness is being around them so annoying. They essentially accept these promotions, so you have to sit down and film everything and promote the restaurant or you won't get comped (get your stuff for free). You think this sounds good and then every single time you sit down with an influencer their phone is out and they're editing videos on the spot. Those charges tend to get split between all employees at the end of the night, which means it can be feast or famine. When I worked in a high end restaurant like that, there were days I was getting my baseline wage (still a decent wage, for a kid part time in college I was getting $30/hr but for someone on their own in Seattle not that great) and then there were days I would get nearly $70/hr especially around holidays. Certain gimmick restaurants are often times famine for a lot of the staff and tend to pay even less, it really depends. They're probably making a decent enough living though for Atlanta.

2-Heat comes from direct trasmission thats solely on contact with the oil. Apparently, even in regular fryers the oil beneath the heating elements is at a drastically lower temperature than the oil above it, where the frying takes place. So the water is heating extremely slowly, and isn't an issue with a domestic fryer.
I wonder why it didn't take off, since they've been around for a while but I'm only just hearing of them. Maybe there is some sort of major disadvantage compared to regularly-filtered pure oil fryers, but discussion on these hybrid water/oil fryers is so rare I can't figure out what it is. I only found the Movilfrit and a Japanese company that made them, and the latter seems like it's out of business.
Neither seemed to make models for the US, unfortunately, and it seems like a slightly dangerous object to DIY a cable for.
