In my experience it's kind of grassy and herbal with less astringency than green tea and about the same mild bitterness. But my experience is limited to what burgers can get domestically.

Bitter, earthy and grassy. Apparently dustier ones are more bitter. I have one nice basically no dust and no sticks. I can forget about it and over steep to fuck and it's still pretty nice.
The dusty one needs more care and still tastes worse
