I make three different types cuz my dad's halfmerican and my mum's euro.

1) boil peeled, cut-up, yellow-fleshed potatoes in water to just barely done then drain; meanwhile, mix mayonnaise and mustard with the juice and zest of 1 lemon, minced pickled cucumber (guess that answers your other q), finely chopped onion, finely chopped celery, mashed boiled egg yolk, chopped boiled egg white, finely shredded carrot and salt then toss the still-hot potatoes with the mixture and let cool.
2) boil peeled and cut-up yellow-fleshed potatoes in a salted mix of white or apple vinegar and plain water then, when just barely done, drain and toss, still hot, with olive oil, salt, fresh chopped sweet parsley and thinly sliced garlic and let cool.
3) boil peeled and cut-up yellow-fleshed potatoes until just barely done; meanwhile mixed finely finely shredded carrots, thinly-sliced Durkastani-style pickled cucumber, some peas (or cooked fresh beans, if you can get fresh beans where you live; they seem uncommon outside of Durkastani stores), juice and zest of 1 lime, powdered black lime, thinly sliced shallot or quarter-moons of red onion, mustard oil (or mustard powder tempered in plain oil), fresh-chopped mint, fresh-chopped dill, fresh-chopped herb-celery leaves (or use celery seed powder if you can't get herb-celery), mayonnaise, thin yoghurt and salt. When potatoes are barely done, drain and toss, still hot, with the dressing and allow to cool. The mustard oil or powder makes this one quite pungent but the mint, dill and dairy cool it down considerably, which confuses first-timers.

German Potato Salad
7 - 9 red potatoes (peeled diced in 1/2 in cubes)
3 hard boiled eggs (halved then sliced)
1 small sweet onion or half of a large vidalia (sliced 1/4" thick and quartered)
1/2 pound real smoked bacon (cut in 1 inch length and fried brown)
1 & 1/2 cups apple cider vinegar
1/2 cup water
3 tablespoons sugar
2 tablespoons flour or wondra
2 tablespoons bacon fat
salt and pepper to your taste

Boil potatoes till they easily split with a fork but are not mushy (6 to 8 minutes).
while potatoes boil mix vinegar, water, and sugar. for less vinegary potato salad remove 1/2 cup (or more) of vinegar and replace with equal amount of water.
when potatoes are finished drain them and let sit until most of the steam escapes gently stirring occasionally.
in sauce pan melt bacon fat, add onions (reserve 1/3 of the onions) and stir about 1 minute.
add bacon, stir about 1 minute, then add flour or wondra and stir to coat everything evenly. if using flour lower heat and stir for 2 minutes more.
add vinegar, water, and sugar to sauce pan and stir until mixture thickens in to a gravy. turn off heat.
in a large bowl add potatoes, eggs, and the mixture from the sauce pan. gently combine and add any salt and pepper to your taste.
add remaining uncooked onions and gently combine with everything in the bowl.
let sit 15 minutes and serve warm, or cover, let cool, refrigerate, and serve cold later.

Real German potato salad. 2 portions.

Half a KG of sticky potatoes.
Boil for 20 or 25 minutes untill almost done. (Tip use a pressure cooker for a faster boil of around 10-12 minutes.)
Peel
Cut in thin slices by hand half a cm should be fine
Fine chopped medium red onion
200 mL of stock, instant is fine vegetable or beef base. (The very best is self cooked oxtail)
Full spoon of mustard medium spice

Sunflower seed or rapeseed oil
White vinegar
These two are important thats why they are listed apart from the other ingredients. Add Oil a good amount, mix. The salad will be very sticky now add the vinegar to taste, mix. The salad will still be sticky but a bit less. Add small amounts of oil until the salad is shiny and does a sloppy sound when mixing (kind of like doing farts with your cheek).Then you have the right amount.

Add pepper and salt to taste. Maybe a small dash of Muskat if you want. You can server with fresh or dried chive.

Hey there, fellow potato salad enthusiasts! I've got a recipe that'll knock your socks off. Get ready to take your taste buds on a wild ride!
2 pounds of red potatoes
1 cup of mayo
1 tablespoon of dijon mustard
1 tablespoon of white vinegar
1 teaspoon of salt

I like a simple one, russet potatoes, mayo, mustard, pickles and some pickle juice, fresh dill, and pepper. I’ve never really used a recipe it’s pretty much to taste, but we like a lot of pickle in our family. sliced hard boiled eggs are optional. It’s also better the day after if you’re planning on a picnic
