Where do you live, I see it literately every time at Whole Foods and even fucking Safeway. I used to buy mine from Bong Amazon, my last huge jar was best before 2019, I still have about 1/10th of it left. But I'm glad things have changed since then and I can just get my next one off the shelf locally.

develop techniques to sidestep/speed up cheesification

no more warehouses with special climate necessary, no more pasteurization facility needed to make cheese safe for usage

Miso soup and natto are good though. I've never tried Vegemite, but Marmite has a much stronger flavor than the stuff Japs eat for breakfast. I've tried it with butter, but I might try Marmite with mayo next time to see if I like it.
