Is it worth it to try making cheese by yourself?
I've seen people make fresh mozzarella before and that seems simple. Obviously I won't be able to make 7 year aged cheddar or whatever but what are some simple cheeses I could make that would taste good right away? Are cheese curds easy?
I'm depressed and need to find something rewarding to spend time on

and the raw milk might be illegal
if you can and do make cheese, consider a goat milk or a blend of goat and cow milk

Pasteurized isn't a deal-breaker, mix a small amount of cultured buttermilk in or use as-is

Wisconsin should give you a lot of opportunities to find what you need! I have not had Wisconsin brick cheese, and learned about it recently, it being key for Detroit style pizza, which I also have not eaten.
I tried to buy raw milk from a dairy here in california to make cheese and they would not sell me any. at the time it was illegal to sell (but maybe ok now?)

you don't generally have to worry about it if you just buy regular milk from the grocery. the shelf stable stuff and a lot of organic stuff is ultrapasturized so avoid those.
