Way to parrot talking points you've heard about without making the slightest effort to apply common sense or understand what you're reading.

It depends on numerous factors including the size of the pan, the moisture content of what you're cooking, etc. Alcohol and water evaporate just as readily as one another in a solution so once you have reduced the solution to one fifth its volume, you have basically reduced the alcohol to one fifth. For this reason, adding wine to deglaze is a lot different from adding wine along with a bunch of water or stock to stew. You can reduce a glass of wine down to a syrup with a negligible trace of alcohol in minutes.

Let's say you add 250ml wine to deglaze a skillet and it takes 5 minutes to remove all the moisture. Now let's imagine instead you add the wine straight into a stew with 1,750ml of water/stock already in there. There is still going to be alcohol present until all of that liquid has gone, which is going to take 8 times as long.

The info you've read is not incorrect but you need to know what you're actually reading. When these studies look at how much alcohol is cooked out, they're talking about alcohol dumped straight into a dish and diluted with a bunch of other liquid. Alcohol reduced by itself i.e. when you're deglazing evaporates very very quickly.
