bean size/shape + burr size/shape = amount of fines.
also the grind setting.
some grinders have burrs that have an easier time with smaller beans at x grind size.
like i usually drink burundi but today i got some ethiopian and the beans are much smaller, and because of this + the shape of the burrs in my grinder allow more small beans to fall into the gap the harder it was to turn the shaft.
normally with my burundi i can turn the shaft like its empty, its so easy. actually effortless, but with these small beans you could really feel the resistance.

depends on the customer.
like i would imagine more espresso gets ordered on weekdays in the morning then lattes at lunch
whereas on the weekend i would guess more lattes and cappuccinos and flat whites.
like if you hit up a cafe on the way to work you want the fastest way to get caffeine into your body(aside from a pill or an energy drink) is an espresso, so you just order 1 and drink it on the go.
but if you see someone buying multiple drinks at once they are usually an intern or assistant and are buying coffee for the office or their boss.

personally i drink alot of coffee but i would almost never make multiple drinks at the same time to drink at the same time.

if someone does order multiple drinks it will be over the course of multiple hours.
like you walk in on a sunday morning and order and espresso and slowly read the paper, order a breakfast muffin, do crossword or sudoku order a latte, finish the rest of the paper, order a flat white while digesting and just looking out the window planning the rest of your day/week.
this could easily take you from 7-10am
i know this because this was my opa's sunday routine. and also living in the center of the city surrounded by 500 identical hipster cafes i walk past the window and all see the same shit.
walk down at 6 and see people in, walk back home at 8 see the same people there, go on an errand at 9 and they are still there, go out for lunch and see them just getting ready to leave.

I'm confused about the water/coffee amount in the Hoffmann french press method. When you're pouring the finished product, some of the water is going to stay in the grounds, you're not going to get 1:1 the water you put in in your cup.
Example:
>325 ML of water
>20g of coffee
>Results in a 256 ML cup of coffee, 69 ML stayed in the wet grounds

So should I measure this ratio of water input vs water output, and then base my coffee amount on the output? My fear is that I'm overloading the coffee because it's actually turning out to be 20g for 256ML.

"Flat white" has a wide spectrum depending on who and where you get it from. In good Australian cafes, you should be able to taste the coffee because the ratio of coffee to milk should be much stronger than a latte, but a lot of places, there's approaching a point where there is basically no difference between a cappuccino, a latte, or a flat white except maybe they'll use different shaped cups. Trying one somewhere and saying you don't like the style is probably a pretty sweeping generalisation.

>Only place where people measure output is espresso
not true.
when making detailed recipes using a moka measuring and recording water in vs water out is important because of the method of percolation that is used.
also you have to make sure you list the exact make and model of the moka because not all moka coffee baskets are made equal.
moka baskets can vary by both volume and of funnel length.
which is also why recording as much detail about the coffee used and the grind size of the coffee is so important when using a moka because say with a standardised bialetti 6 cup basket 20g of say ethiopian does not equal the same volume as 20g burundi.

whereas for espresso or pour over the volume doesnt matter so you only need to measure once.

another thing with moka, is that if your liquid out is the same as your liquid in then you have with 100% certainty, destroyed your coffee and you have fucked up your brew.
because optimal moka brewing is stopping the brew at the specific right time long before all the water has been used.
i would argue that recording liquid in vs liquid out is of utmost importance when dialing in and perfecting a moka technique or recipe, even more so than espresso or any other coffee brewing method.

here in australia people will order "strong flat white" to essentially solve the problem you had where you could not taste the coffee
but at the end of the day it is a milk drink so the taste of the coffee with be significantly diminished no matter what.
and the average cafe here is about as shit as the average cafe well anywhere else.
you really have to hunt for actually good coffee. these days.
but a good rule of thumb is if the cunts behind the counter look under 30 dont expect good coffee.
best flat white i have had from a cafe was from some mad old vietnamese cunt who didnt speak a lick of english despite living and working here all day every day for the past 50 years.
fuck it wasn't even a cafe, it was a chip shop that only had 1 coffee drink on the menu which was a flat white.

Can someone recommend me a new coffee to try? I buy the one in my pic right now and it's delicious but I want to branch out and try something different. The one I drink is very smooth, similar to drink some tea with honey and a bit of milk. If there is a sampler someone could recommend that would be good too.
I brew my coffee through a moka pot.

Sup /ctg/

Been lurking for a very brief period of time.

I got a kingrinder k6, french press, and some fresh local beans. Howd I do?

I tried 30g of bean with 500ml of water doing the hoffman method and it was a light balanced little cuppa. I'm still figuring out if I got the grind setting on the k6 right (120 clicks, which I guess was two full turns to 0).

I usually drink lots of cold brew and nespresso. I had a shoddy delonghi espresso machine that I threw out because it would do all kinds of weird things (it was a hand me down). Kind of regret it. Anything else I can do to get a stronger cuppa? I have a really sketchy klik moka pot since I live in northern Cuba and they sell cheap ones in nearly every store, but the inside of the watcher chamber looks like hell.

tldr: how do I get stronger cuppa like 'spresso

I bought vietnamese phin brewer and some grinded coffee from treng nguyen (is it a good one?). After a few days of preparing it the same way (I guess) the taste changed from very nice to much more sour. What is my problem most likely? The way I store the coffee? It's just in the original package (closed is as tight as I could). Blooming time? Amount of coffee? Temperature of water? Different recipes had different values for each of those parameters. What's the best recipe?

I posted a thread, but did not realize we had a general for coffee. Espresso machines went on sale on Amazon and I am torn between the Breville and Gaggia. I know a lot of people in real life who have the Breville and are happy with it, but the gaggia is cheaper even if I bought a grinder to go along with it and it seems to be better built? Help me.

Gaggias are built like a tank and have an extensive modding community if you want to get more out of them.
Brevilles are more normalfag friendly and have more features but are more locked down and not built as well. Also while it has a grinder, it's not going to be anything more than serviceable (but on the other hand the gaggia doesn't have a grinder at all).
