They are, just not in the way you think. Shitalians have started going hard commercializing their cuisine.
Before modern day, Italian cuisine was basically good food made with widely available ingredients, transformed by clever understanding of simplicity and flavor.
It was accessible and adaptable by nature. Everyone's "nana" had a different take on the regional favorites and no one claimed theirs was wrong, despite having unique touches.
This is a huge reason why Italian cuisine was readily adapted and became prominent in America.
Compare to French cuisine, which is gatekept by chefs with rigid rules, etiquette (French word), etc. There are strict rules in French cooking, including what the chef (another French word) is supposed to wear. It has always been a much more exclusive cuisine, and the main reason why French cuisine enjoys a "fine dining" reputation and has almost no common adaptations in other cultures.
Now, in 2023, shitalians are trying to imitate French cuisine. They invent random rules and "sins" that you must never do, pretend cream can never go into carbonara, etc. They are doing this because they hope that, by transforming their cuisine into an exclusive one, their restaurants and chefs might gain the same success and reputations as French ones.
