Finely chopped onion, some lemon juice, and capers typically. If I want more green and crunch, I’ll top it off with a handful of watercress, or go tuna melt and put two slices of a good melting cheese, one on each side.

Start with a drained tin of solid tuna in oil (preferably olive or mustard, but yes, I'll even take seed or soya).
Then, for American-style, mayonnaise, prepared mustard, finely minced onion, thinly sliced celery and salt. That's it.
For Italian-style, use the oil, some lemon juice, some prepared mustard and a bit of salt to make a dressing, fold the tuna with it and some some fresh chopped sweet parsley and top with thinly sliced shallot or red onion.
American style I'll have with crackers of toasted Ameribread. Italian style with "peasant bread" or other hard crust sourdough.

pretty much anything can go into tuna salad: curry paste, zaatar, szechuan pepper, kimchi and gochujang, capers, chimichurri, whatever. though you can’t go wrong with mayo, mustard, pickle, and fresh dill.

Tuna, mayo, chopped pickles, green onions for the tuna mix. Besides that, you can't go wrong with cheese, lettuce, tomato, a bit of pesto, and some strong mustard. The tuna water is reserved for the cat.
