I live in the county next to Tillamook. Their ice cream is good but I find they whip too much air into their product for my preference. Sure the texture is light and fluffy but remember it's priced and sold by volume, not weight.

Umpqua is a good local competitor and makes their product with less air, therefore better value.

Best thing would be to make my own ice cream. Negative is I'm not keen on buying and storing the equipment just for a dessert I eat infrequently. Positive would be making home made blackberry, huckleberry, or salal ice cream.

Literally 95% of all ice creams, even the good ones, have those things and this has been so since like the 60s. And before they had locust bean gum they added gelatin. Starch has been a common addition in gelato for ages as well. Traditionally ice cream has egg yolk in it because it's a stabilizer and a thickener. I don't see any good reason why stabilizing with egg proteins is trad and based but stabilizing with starches or vegetable fibers like locust bean gum or guar gum is somehow haram. It's just shit that binds water to make the product more smooth and better.

Overuse of certain stabilizers (especially guar) can lead to weird textures, but there are basically no downsides to adding an appropriate amount of locust bean gum to ice cream which is why just about everyone adds it, except those who are very serious about a clean label. But ice cream is meant to be enjoyed and not admired for its label. It reminds me of when snack manufacturers started removing MSG from their products because consumers were afraid of the big scary word monosodium glutamate on the label, but in doing so were making their products worse because MSG is delicious actually.

For some reason /ck/ in particular has an autistic fit about stabilizers. The actual main factors that determine the quality of ice cream are the quality of the dairy, the quality of the flavoring ingredient, fat content, air content, smoothness of texture and freshness. I agree that the vast majority of ice cream on the market is shit, but it is so because it's low fat, whipped full of air and made with cheap poor quality dairy and flavoring, not because there's stabilizers, emulsifiers, dextrose or such in the mix. In fact without stabilizers, you would be eating flavorless low-fat milk foam that's additionally coarse and icy.
