Years ago, when I was a vegetarian, I found a vege gumbo recipe that I made once. It was the only time I've had "gumbo", and I've never looked up the recipe again but I've kept making the recipe and adjusting/forgetting bits of it since. I'm pretty sure it no longer even remotely resembles gumbo. But it's good on toast.
