What is your go-to when it comes to sushi? Do you crave it or is it just something you try every month or so? I can easily put away several orders of raw salmon nigiri or sashimi, while I liked smoked salmon I much prefer it raw and dipped in spicy Mayo.

That's my go-to, but I also love hamachi (though it's usually expensive), ebi, and toro. Negitoro is my favorite maki, and it's usually what I order first to judge the quality of the restaurant I'm at. I also occasionally indulge in the new age shit like volcano rolls and dynamite rolls. I think crushed tempura batter is a great addition to sushi if you're looking for something tasty but not super classic. Better yet, aburi is fantastic as it adds depth, so long as the chef is careful to not cook the meat and only torch the outside. Aburi and beef tartare are definitely the things to order from a higher dollar Japanese/French fusion place (several in Vancouver and probably elsewhere). Pretty fantastic

Oh, and it is something I will do for lunch when I am feeling it, usually 1-2x a month. If on travel I will actively seek it out, because I live in an area where sushi is ok-tier. There are better places in the cities, so I will hunt them down and get the fancier shit while at them. Things like bluefin tuna, etc. that I can't get locally. Albacore and other stuff come to mind. Highly recommend cruise ship sushi, usually they have some rare options too. I've also done wagyu sushi overseas, good stuff.

Sushi is a "going out" food for me, so most often I'm either eating it on a date with my wife, out with friends, or at happy hour with coworkers. With my wife we usually get something economical like like cali rolls or makis, and then a little something decadent like otoro or uni. With coworkers I just get a regular cut roll roll so tabbing up at the end is easy. With my friends I order like 5 beers and everything on the menu and devolve into a horrible gluttonous beast. That being said, if I'm preparing my own sushi at home I purchase fish from a local vendor who specializes in supplying restaurants with fish for sushi. The prices for the fish there are not cheap, but it is cheaper when buying large pieces of fish as opposed to buying many individual pieces from a sushi restaurant.

Been doing this for years now and have no problems. Farm raised Salmon is basically frozen before being shipped to where you're at so all the parasites that would have not been in the farm would be all dead. I wouldnt try eating fresh river caught salmon raw though.
