Last summer I went diving and caught a lot of fresh water mussels. Seeing as they were not salt water, the taste wasn't as good. When I cooked them I bathed them in white wine, salt, pepper and butter and they were still tasteless. How do you cook these mother fuckers so they actually have taste?

They don't have any taste beyond generic shellfish flavor. Ocean ones have a stronger briny taste but it's nothing special. Like snails they exist to just add texture to garlic butter sauces
