It doesn't really matter. Find something affordable, don't let a high price tag guide your decision. I bought a $35 no name jap cleaver from Hmart and I butchered a whole duck with it fresh out the box and couldn't ask for more

Modern steel is better than the high end shit from years ago. Buy a cheap name brand knife and learn to sharpen it. The practical difference between a low and high end knife is the high end steel will hold it's edge slightly longer. If you use the cheap one enough to make it dull in a month, the expensive one will go dull in six weeks.

Lodge is fine, just use some sandpaper to smooth out the surface and wash + season it after every use. Others will disagree; they're cooking with filthy pans.

Le Creuset is genuinely great, but expensive as hell. You can get 80% there with a dutch oven that costs 1/8th as much.

>roasting pans
I don't think you need one.

>knives
Learn how to sharpen a knife and how to keep your fingers out of harm's way. You can break down a chicken or root vegetable with a $2 paring knife; it's just gonna be a little more hassle. Get a few stones with no grit higher than 1,000.

>cutting boards
Get whatever, just keep it clean. If wood, apply a little mineral oil; that can be shared with your sharpening stones.
