>250ml of heavy cream
>5 garlic cloves minced/microplaned
>tablespoon of kosher salt
>tsp of white pepper
>tsp of black pepper
>tbsp of tallow/butter/lard
>heat cream, minced/planed garlic salt, pep, tallow until almost boiling and transfer to SS bowl
>peel pots and turnups and mandoline/meat slicer/cut as thin as possible like ⅛" into bowl of hot cream
>toss a few times to evenly distribute seasonsings
>either layer in a cake pan of whatever size or layer in a 4" ring mold with foil on the bottom
>if using cake pan fill another full of hot water with a foil on the bottom and weigh down the potato mixture and bake at 400f until fork tender

>ideally fill cake pan 1/3-1/2 at max cause cream boil over, put a baking tray below your cake pans
>if using ring molds use an empty soup can that fits and fill with beans or use a all metal olmypic weight to weigh the can down
>once fork tender after like 30-40 mins unmold/un weigh and bake at 450f for 5 mins to crisp up

Not hard at all, very crispy. It's like ultra-crispy cracker jack. The big issue I still have is that popping the kernels in molten sugar makes it hard to remove unpopped kernels. Also again, it's dangerous. I wear long, heavy gloves and safety goggles when I make it. It's a bit difficult as well, since the temperature difference between where popcorn kernels pop and where sugar burns is pretty slim.

It tastes pretty good, but it's mostly just a fun challenge I like to mess with. Sometimes I wish I had some lab equipment...

Visually, I think it would look better without herbs. I can pretty much guarantee those dry herbs aren't doing anything for it flavorwise. In my opinion, throwing herbs on things is sort of lazy and passe... you could put fresh herbs in the food. Quite frankly, it's not nearly as appealing of a garnish as those nicely seared shrimp. Did this tonight. Steamed white fish cooked in a foil parcel along with ginger, garlic, soy sauce, a splash of sesame oil, sprinkle of msg). Served on white rice (basmati, and yes I used a rice cooker). Finished by pouring over some hot sesame oil with slivers of garlic fried off in it.
