TL;DR OP cant find sweetbread

Have any anons eaten less common meats? Did you get them from a butcher? How do I get less common meat(offal), spec sweetbread, or bräss. Most grocery stores dont have them and even nicher delis and such usually only have tongue and liver, sometimes bird hearts. When I googled it I only got recipes, not stores that sell them

Yes, I got sweetbreads for really cheap from a local livestock rancher friend. Theyre delicious, but quite tedious to prepare.

Just ask at a butcher. I haven't had the really weird stuff but I see it in the freezer at the butcher I go to. Most could probably order anything you want in. The butcher I go to is an Italian one I dunno if that makes a difference in what they carry.

That's all i need to do. He carriest most of the more common of the less common offal, if that makes sense. For uteri, I have to go to a different butcher about a mile away.
Used to be another, much closer to my place halal butcher around the opposite corner who carried things he wasn't supposed to like lungs, heads, brain and shit like that. Never bought anything from him but lamb's feet and a goat haunch as well as his homemade merguez (which tasted like absolute ass, holy fuck).

I can't even procure kidneys anymore. I can get tongue, liver, hearts (not just bird), gizzards, tripe, sometimes chitterlings, but other stuff is impossible. Good luck ever getting ahold of caul.

They're pretty nice. One of the less 'offal' tasting of the organs. Lamb ones taste like the fat you'd get on a chop or something.

You are gonna need to go to an actual butcher shop. I go to a country store nearby that's owned and operated by a family that's been farming cattle for generations, so they sell literally every part of the cow. You need to find a place like that.
