Try baking sweet potatoes until they are just tender and eating them that way. They are so much better with a little texture than they are when fully soft.

If you like the roasted/charred skin as in OP's photo, you can bake them until barely tender, let them cool overnight and then bake them at high heat until hot enough to serve.

It depends for me. Sometimes you want some firmness, but if you’re baking them to serve with a steak or something I think they should be completely soft, with just a bit of salt and butter
