If you put half as much effort in at the start as you did here it would be a lot nicer. It really doesn't take much to season just drizzle some oil and sprinkle a bit of whatever on it. At the bare minimum add salt.

If you want really zero effort cooking then slow cooking crock pots and the like is the way to go. Just throw all your chicken, some carrots, onions, celery, garlic, herbs and whatever else you might want eg potato into it and let it bubble away.

Anon new to cooking here. Recently started making chicken thighs (boneless, skinless) by cutting them up into smaller pieces and placing on a wire rack over baking sheet. I season with paprika, cumin, onion powder, garlic powder, and salt, and I use a bit of olive oil before that. I broil on high for 10 minutes but it seems like the results have been pretty inconsistent. Sometimes I get nicely browned pieces that have a nice flavor but other pieces are extremely bland. Did I do something wrong in my steps/any suggestions on cooking them better?

Also I'm not sure I described it accurately, but the meat is elevated on a rack, in the sheet pan. Not touching the water. You can buy a "roasting rack" setup that is a sheetpan with a wire rack that elevates the meat above the sheetpan. You don't want the meat sitting on a flat metal surface, it will burn. You want it elevated as much as possible.

In large scale restaurants they have giant ovens and hang the meats as much as possible to avoid them touching surfaces. You want convection as much as possible, indirect heat. No contact.

if you're worried about temperature, then invest in a thermopop (cheap option) or a more expensive gadget which connects a probe with wires that come out of the oven and will alert you when it reaches temp, which for chicken is 74c in the thickest part for 30 seconds. Although personally I'd jump that up to pulling it out at 78c to be sure.
If you're really really worried, then get a sous vide machine and cook it to temp then blast it with a frypan if you want colour.
