Except whiz wasn't invented when cheesesteaks were first made. Whiz was first added by Geno's to cater to Midwestern tourists who were dismayed that Pat's didn't serve theirs with the Whiz and Velveeta they were used to. After Geno's exploded in popularity with tourists, Pat's was forced to follow suit or go under. It got so bad for Pat's that all of their satellite locations had to close, leaving only the original one at 9th and Passyunk in South Philadelphia. They had a location on South Street, another on Ridge Ave in Roxborough/Manayunk and a third somewhere in Southwest Philadelphia (forgot where). The Ridge Ave location is sorta still open, but on Henry Ave and under different ownership, now called d'Alessandro's. The Ridge Ave location is actually where cheesesteak was first made in the late 1950s, several years before Whiz was even invented never mind sold in stores. Prior to that, it was just "steak sandwich" with no cheese.

Any take away pizza joint in South Philly. If you're already close to Pat's/Geno's, J&J is about a block up 9th street from there and made decent cheesesteaks last time I was there over 15 years ago. For me it’s Steve’s Prince of Steaks in Northeast Philly. There’s one on Bustleton Ave and another at Conley and the Boulevard. There was one in Center City like 10 years ago but I don’t know if it’s there anymore.

My real hot take is that Geno’s actually isn’t that bad, it’s just a tourist trap. Frankly I find Dellasandro’s and Jim’s more overrated by locals.

Provolone, wit. No other way. Never get the orange goo that people associate with cheesesteaks. No bell peppers, no mushrooms. They are unnecessary. Hot peppers on top though, ask if they have "fried Italian long hots" (its a philly thing). Honestly, it's hard to say which is the best place. Even the best (John's Roast Pork, D'elassandro's, Steve's, Max's) are all tourist traps in their own way. A hot cheesesteak for $5 off a cart on the side of the street can be so much better.

Carts are a good place to go. There's one right outside of UPenn that makes a decent cheesesteak. The reason they're so good though is because they all use sliced cheese instead of the whiz garbage and their grills are seasoned from many previous orders. I think they actually find decent meat to use, without being pretentious because they're run by families. They put care into every order and they know which hoagie rolls are the right ones to use, which is a make or break for any cheesesteak enjoyer.
