I love beans. I buy a lot of canned beans. I'm wondering if there is any reason to be a bean purist and buy dry and soak them myself? Does canning remove anything from beans or does it just remove the need to soak?

pic unrelated it's just the only picture of beans I have. I'm talking about regular canned beans not flavored or with additives.

Canned foods suffer from denaturization which causes odd background flavors. This is why most canned proteins taste sort of like dogfood, no matter what it is; beans, tuna, beef, chicken, dogfood, etc.

you can get hundreds of different kinds of dried beans and they're much cheaper than buying them canned. that might change when your cooking fuel or electricity costs go through the roof though, always do the math.
