As someone who lives in New Orleans no I’ve never heard of that. In fact some members of my family are pretty heavily Cajun, even had nutria at a family gathering once but I’ve never heard of anyone eating snake. However some places around here do occasionally serve alligator, normally in the form of alligator sausage or more rarely they’ll have alligator tail meat.

I’m not super knowledgeable about alligator meat but I do know that alligators have two tenderloins in their tails that’s kind of considered the best and most tender part of the gator. Also I know that alligator sausage is pretty good

It's really simple and I assume even you have access to the ingredients in winter-land. Just google "cajun spice mix" and you'll find a bunch of different recipes. It's a great, unique flavor from common ingredients. You can easily make a bastardized version of jambalaya as long as you have that spice. It's even better than the boil you want to try so much.

The specific recipe you're looking for is "crawfish boil", and that commonly uses a large bag of premixed spices from certain brands.

NTA but Old Bay isn’t really Cajun it’s more of a northeastern seafood thing, think the New England area. The equivalent down here would usually by Tony Chachere’s, a salt and spices mix that’s pretty much used on everything savory

Old bay is alright, but it isn't cajun mix. Seriously, just go make the spice mix. It's better than what it seems like on paper. It's one of those seasonings where the finished product is greater than the sum of its ingredients. It just hits a certain note that is hard to write.

i'm from laplace and i've had snake on more than a few occasions.
i find it to be wonderful. it's similar to chicken, but more frog legs for those who have had them.

yes. cajuns are more rural swamp people and creoles are more city folk and tend to be mutts with whatever new orleans had to offer at the time, typical spaniards, frenchs, blacks, whatever it seems really.

the smoked sausage is called andouille(ahn-doo-we) try to get you some boudin (boo-dan) if you can.
the potatoes are red potatoes with thin skins, russets might work but i wouldn't try it.
when you catch your crawfish be sure to put them in a tub of water to wash. you'll want to do this a few times until it's clear or you'll be tasting pure mud.
after it's clear give the crawfish a final soak with salt water which causes them to shit themselves and cleans thier digestive tracks.
after you cook them with whatever you're gonna throw in there discard ones with a floppy tail. they died before cooking and could have diseases.
