I had 6g of beans left at the end of a bag, not enough to make a pour over, so I ground them, threw them in my Hario Switch, and made them with my usual recipe, just scaled down to 100g of water. It came out really good! It actually brought out more of the tasting notes than when I used the V60, which was stronger on the fruity notes but less on the Earl Grey notes that are supposed to be present. That's one thing I like about the Switch, you can use the same recipe for a wide range of doses and coffee types and still get good results. That probably applies to other immersion brewing methods as well. Another time I did this with only 3g of a different bag of coffee, and that came out good too.

Has anyone here made a Cuban espresso/cafecito Cubano? I'm visiting my dad and want to make him one. I've seen two methods of preparation, and I'm wondering which of the two would be better. I've seen one method where you add the brown sugar directly into the portafilter basket, but I don't know how the added volume of sugar is going to affect extraction time and pressure, etc. I've also seen one where you let the shot pre-infuse, and use stir those first few errant drops with the sugar, then just pull the shot normally on top of that.

they shoot for a all rounder grind that isnt actually good for any method.
some cheaper espresso machines come with "pressurised" portafilters to help brew this one size fits all grocery store grind but still usually fails.

Need good water chemistry too. Heavily alkaline water can be great for drinking, but absolutely neuters any acidity in coffee. You can test it yourself brewing some coffee with your normal water and some with a bit of bicarbonate added in. It's amazing how many shops have bad water. Especially around here where the tap water is excellent for drinking so shops try to get away with just a filter, but do nothing to address the the heavy bicarb we get from being a largely limestone area so they end up with muted coffee.

Austin water problems. ph here is like 9.7 as of latest reports. i remineralize distilled water for my coffee. my starting points are
- espresso water: 20gh/80kh
