for health reasons I cant eat anything with added salt and should keep the intake at ~1g/day

Pretty tough to keep below 1000mg... I have to watch my salt intake as well but I found it nearly impossible to do it so I upped it to 2000mg and I just avoid fast food, or anything with sodium nitrates.

I do it for blood pressure issues I got after covid fucked me up.
But I mean, unless you're fighting off cirrhosis or something fucked up like that, salt really isn't that bad just drink lots of water and don't eat shitty foods. And if you're craving some junk type food almost all "organic" foods have low sodium, you just pay a bit extra that's all.

You'll get used to saltless flavors, you'll get to like it and you'll discover that different foods have deep and interesting taste which typically is being hidden due to distinct salt flavor.
Your overall taste will also improve - when I occasionally buy some spiced chips or the like (because I remember that I used to love them) I can hardly eat it because I can taste distinct fucking chemicals - like eating shampoo or some metallic powders..

Find a salt with potassium and sodium then, they usually have 70% K and 30% Na and these are reportedly the right proportions which may be more important than just too much sodium.

Although a bit higher than what you can ingest, I use Morton lite salt. I use a spoon and grind it super fine on a cutting board. I sprinkle it on my food right before I eat it. that makes it taste reasonably salty without too much sodium.
