I get bone in skin on chicken thighs and then I remove the bone and some of the fat to make nice cut (I save the bone and fat for stock)

I then cook it skin side down on a hot cast iron on the stovetop for 5 min to get the skin crispy and I finish It in the oven where the broccoli is aleady roasting

The skin gets nice and crispy

I cut them up and then threw them in cold water, splashed em around to get the starch off, rinsed, then soaked cold water for 30mins.
Dried them then coated in light olive oil, salt, pepper, dried rosemary and threw them in a 200c oven with the fan on. Left for around an hour and wala.
