broccolini is superior in terms of taste and texture tbqh. however, here are my go-to preparations:

blanche/steam until bright green
quickly blacken in cast-iron skillet with whole black peppercorns (salt too, obviously)
serve with rice dishes. i do gochujang tofu/chicken or dishes with sesame/peanut sauce

roast in oven with garlic & onion powder, red pepper flakes, other fav seasonings, and salt until crisp. serve with anything

broccoli cheddar quiche is great, as well as broccoli cheddar soup

this one works better for broccolini, but florets cut in half are great for galettes. romano and morel with herbs on a crust dusted with nutritional yeast is great

DO NOT eat it raw
DO NOT boil it or cook it past the bright green stage
DO NOT use it in a dish where the top will absorb too much liquid and become a soggy mess
all of these will impede your enjoyment

The only good way to use this disgusting plant is to put it in the food processor and add to tuna casserole or dump in large sums of melted cheese. In any case, it must me grinded up.

If you don't like broccoli, try so-called baby broccoli/broccolini/tenderstem broccoli. They're sweeter and less woody so might be more pleasant for you to try. Also, cream of broccoli soup or broccoli chowder might be your speed, but if they're not, give the other varieties I mentioned a go.

I made 'mashed broccoli' to get my kids into it.

3 parts broccoli, 1 part potato. Boil the shit out of it so it's overcooked and soft. Drain as much as possible. Mash/blend the cooked product with some butter, garlic, parsley, salt, pepper.

It's very nice and got them used to the idea of eating broccoli. Healthier than mashed potato, far less healthy than just eating broccoli...

Shred raw with cabbage and scallion, add blue cheese and slivered almonds. Serve on top of grilled hotdogs in buns after you've had a six pack of IPAs. Try to follow along with whatever bullshit show is on Amazon prime, give up and have a second helping of slaw, this time with bacon bits on top. Blearily drive to the gas station for more beer. Grag a bag of pork skins, realize at the register you picked up barbeque instead of hot. Fuck. Stagger back to the chip isle, walk past cops. Wave and smile at them, you're white and clearly employed, they don't care. Weave your way back to the register and ask for a pack of dutch masters because you can't fucking wait to wake up with the taste of dead people on your mouth. Drive home going 10 miles under the speed limit and crack open another beer. Scoop up slaw with pork skins and fire up a cheap cigar on the porch. Go to bed. Do it all again tomorrow.

it really is amazing how simply you can cook vegetables to make them good. pretty much every vegetable just needs oil, salt, pepper, and maybe a few powders and roast it.

i fully believe that anyone who hates some of these vegetables (mainly brroccoli and brussels sprouts) jsut have them horribly steamed and season-less
