I'm pretty neutral when it comes to James Hoffman. On one hand, he's the only food/drink reviewer on YouTube who isn't afraid to give negative reviews. Every other YouTuber only focuses on positive things because that's what their audience of third-worlders wants to see.

I recall him making the case that immersion is better than percolation. Absolute tastelet take. The only benefit immersion has over percolation is that it's easy, and the increased evenness of extraction makes it harder to really fuck up a brew. But it is a crutch. Only percolationchads can ever reach the ultimate clarity of flavor.

Coffee was very different when he won. I imagine it was much harder to find single origin beans that weren't completely over roasted. Ecommerce wasn't as mature as it is now, so you were pretty much stuck buying what was local to you.
