Cubanos and their Jewish counterpart the Rubano are both great picks.

How the fuck has no one mentioned a banh mi yet? It's got the pickles (carrots and daikon), it's got fresh greens (cilantro), it's got two types of meat (pate and pork), it's got heat (chilies or some spicy aioli), and it's on some yummy ass bread. Name one thing wrong with it. And if you say cilantro, it just proves you're a genetic defect.

The two I mostly like to make are boiled egg+mayo with salt/pepper, and a meat combo (usually salami, chicken and triple smoke ham) that may have lettuce, tomato or pickles.
When I'm buying, since I'm in Australia we don't really have "delis" where you pick & choose (unless you're in an industrial/office area with a diner or a subway), we have vietnamese bakeries that have pork or chicken rolls with pate, spring onion, coriander, carrot, onions and cucumber (depending on where you go).

Made this a couple weeks ago and I can’t get it off my head. Sourdough baguette, black truffle infused Brie cheese, thinly sliced hangar steak, grilled onions, shallots, and about a half clove of garlic, topped with some fresh arugula dressed in a homemade balsamic vinaigrette with a touch of malbec added to the vin. Best sandwich I ever made. Afraid to try and recreate it for mixed company simply cus I have been talking about this stupid fucking sandwich for weeks
