Because that's where a lot of vitamins and fiber are contained. You can eat a majority of fruit skins, I'm learning, though I blend it all so it's easier to eat large amounts, mixed with various veggies too. Delicious.

Here's one of my secret ingredients for soups and so much more more. Powdered beef gelatine. I've gone through almost 5lbs in the last 1.5 years.

You just add it to the water or stock while it's cold and you get that sticky richness from homemade stock. Pure and complete protein.

You could even try it by getting flavorless jello at the store. I add it to all my soups and sauces. If you add enough it even emulsifies fats, which can make remarkably delicious sauces.

If you do enjoy the gelatinous stock texture it will become a staple.

Powdered dashi(hondashi) would also be a convenient way to improve your soups. It's a really flavorful powder that is essentially a natural form of msg, so it isn't really cheating.(anything but shaving katusobushi to make dashi is cheating, but no one has the time or means for that.)

It's one of my secret ingredients along with the beef gelatine. It will make your soups way better. I have used dashi in western cooking extensively and the simple and mild flavors that your soup has will benefit greatly from adding dashi as the base.

This is an old one, my mom taught me this, use lemon juice on apple slices to prevent them from going brown. They stay nice and crispy that way.
