this is what i have on hand. just tossed a couple bottles the other day so i have room for 2 or 3 more.

suggestions?

also, tabasco can suck an asshole blister. no idea how that shit is popular.

I like more vinegar forward hot sauces for breakfast burritos to help cut through all the greasy fatty ingredients with some acidity. Something like Tabasco does well to balance out the fattiness of things like scrambled eggs, bacon/ham/sausage, and fried potatoes.

I mostly use Gringo Bandito and Melinda's these days, but also like 'Vark, Dirty Dick's, Yellowbird, and El Yucateca. I've also been enjoying pic related recently (turns out I like roasted habaneros). I rarely add Tabasco directly to my food, but that stuff will always have a spot in my pantry. It has such a distinct flavor that nothing can really take its place.

This Captn Sleepy's one was always awesome, the guy stopped production, I called him up, the number was right on the bottle and he told me what a production costs v. distribution and this and that, it's not easy to get funding for that. It is tops though.

Crushed red pepper hack:
>put some pepper flakes in a jar
>add just enough rice vinegar to re-hydrate the flakes but not make it soupy
>mince, or crush a small clove of garlic with a pinch of salt until nearly a paste
>add the garlic and just enough olive oil to cover the pepper flakes
>mix the ingredients with a fork until the garlic emulsifies the oil and flakes into a thick paste
>store in fridge and use on noodles, rice, etc.

i recently got some 'flatiron pepper co' pepper flake blends, 'hatch valley green' and 'i cant feel my face' its nice, a fun alternative to hotsauce for some meals. little more niche though. the green one tastes better, its actually delicious. still have not had the chance to use on pizza. i have a torchbearer sauce called the rapture coming in inn a few days. still on the quest for finding my favorite super hot hot sauce, going down the list one by one
